Baked Spinach

Ingredients
- 1 lb. fresh spinach or 1 (12 oz.) pkg. frozen spinach
- 4 slices bacon
- salt and pepper to taste
- 3 medium tomatoes, peeled and sliced
- 1/4 lb. sliced Swiss cheese
Directions

1Cut bacon into 2-inch pieces and fry until crisp.

2Drain on paper towels.

3Wash fresh spinach, removing any tough stems and drain good.

4If using frozen spinach, thaw.

5Grease a shallow baking dish and arrange spinach over the bottom.

6Sprinkle salt and pepper over it.

7Alternate tomato and cheese slices over the spinach to cover it.

8Sprinkle bacon on top.

9Bake, uncovered, at 375° for 20 minutes or until the cheese is melted and the spinach tender.
