Baked Squash

Ingredients

  • 5 lb. yellow squash
  • 2 eggs, beaten
  • 1 c. bread crumbs
  • 1/2 c. sugar
  • 2 Tbsp. chopped onion
  • salt as needed
  • dash of pepper

Directions

    Cut tips of squash and cut each into 3 or 4 pieces.

    Drop squash into a large saucepan with enough boiling water to cover. Return to a boil, reduce heat and cook until tender.

    Drain in colander.

    Mash.
