Ingredients

  • 2 large yellow squash
  • 1 onion
  • 2 eggs, beaten
  • 1 c. evaporated milk
  • 1 c. Cheddar cheese, shredded
  • 2 Tbsp. butter
  • 2 c. Ritz crackers, crushed
  • salt and pepper to taste

Directions

    Boil squash and onion. Drain. Add remaining ingredients except crushed crackers.

    Pour into a greased casserole dish. Top with crushed crackers. Bake at 350° for 30 minutes. Serves 8.
