- 2 1/2 lb. yellow squash
- 2 eggs, beaten
- 1 c. bread crumbs
- 1 stick butter
- 1/4 c. sugar
- salt to taste
- 2 Tbsp. chopped onion
- dash of pepper
Directions

1Cut tips off squash and cut each into pieces.

2Drop into large saucepan with enough boiling water to cover.

3Return to a boil; reduce heat and cook until tender.

4Drain and mash.

5Combine with beaten eggs, 1 cup bread crumbs, butter, sugar, salt, onion and pepper.

6Turn into a 3-quart casserole that has been lightly sprayed with nonstick spray.

7Cover with light layer of bread crumbs.

8Bake at 350° for 20 to 25 minutes or until lightly browned.
