- 3 acorn squash
- 1/4 tsp. salt
- 3 Tbsp. oil
- 1 1/2 c. minced onion
- 2 Tbsp. soy sauce
- 3 c. cooked rice or 5 c. breadcrumbs
- 1 c. sunflower seeds
- 1/4 tsp. sage
- 1/4 tsp. thyme
- 1/4 tsp. marjoram
- 1/2 c. water
Directions

1Preheat oven to 350°.

2Halve and clean squash.

3Brush insides with oil.

4Place in baking dish with 1/4-inch of water.

5Set in oven to bake for 45 minutes.

6Prepare stuffing by cooking onion in oil until clear.

7Add sunflower seeds and stir 1 minute more.

8Add salt, herbs, soy sauce and water.

9Reduce heat to low and simmer uncovered 5 to 10 minutes.

10Add rice or breadcrumbs.

11Fill squash after 45 minutes and cook for 10 to 15 minutes more.
