  • 3 tablespoons light mayonnaise
  • 2 tablespoons preshredded fresh Parmesan cheese
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 large tomatoes, cut in half crosswise (about 1 pound)
  • 1/4 cup fat-free Caesar-flavored croutons, crushed (such as Brownberry)

Directions

    Preheat oven to 400°.

    Combine first 6 ingredients in a small bowl. Place tomato halves, cut sides up, in an 8-inch baking dish. Cover tomato halves evenly with mayonnaise mixture. Sprinkle with crushed croutons.
