- 1 turkey (any size), thawed

1Preheat oven to 475° (very hot), about 9 or 10 p.m. the night before you plan your family feast.

2Place turkey in a covered roaster.

3Add 1 quart hot water and bake 1 hour.

4Turn off oven. Do not open door.

5Leave all night.

6In the morning, it will be golden brown; you will have plenty of broth for dressing and gravy and the most tender turkey you ever tasted.

7Be sure the roasting pan's lid fits.

8I use a hot water bath canner with rack under turkey.
