  • Olive oil
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced or pressed
  • 1 tablespoon tomato paste
  • 1 squeeze anchovy paste
  • 14 ounce can chopped or diced tomatoes
  • 1 1/2 cups chicken broth
  • 1/2 cup red wine
  • 1 bay leaf
  • 1 teaspoon thyme
  • 1/2 cup balsamic vinegar
  • 1 bag fresh spinach (9-10 ounces)
