- 1/3 c. olive oil divided
- 1 garlic clove pressed
- 1 Tbsp. oregano
- 1/3 c. Balsamic vinegar
- 1 onion coarsely chopped
- salt and pepper to taste
- 1 c. black olives sliced
- 1 6 oz. Vermicelli or Angel Hair pasta (cooked per pkg. directions set aside)
- 4 boneless skinned chicken breast
Directions

1Heat 2 Tbsp. olive oil in skillet.

2Add chicken and cook 10 minutes.

3Reduce heat to low.

4Add garlic, oregano, salt and pepper.

5Turn chicken.

6Add Balsamic vinegar and remaining olive oil.

7Bring to simmer.

8Cover and cook over low heat until chicken is done, about 15 minutes. Add black olives and heat until warm. Serve separately or on top of pasta.
