Balsamic Glazed Chicken

- 4 chicken breasts, cut in small pieces
- 1 onion, chopped
- 1 tablespoon fresh thyme
- 1 sprig fresh rosemary
- 2 garlic cloves, chopped
- 2 tablespoons honey
- 14 cup balsamic vinegar
- 1 cup chicken stock
- 3 tablespoons olive oil
- 2 tablespoons butter
Directions

1Heat a large skillet over medium-high.

2Add 2 tablespoons of olive oil an cook the chicken.

3Transfer to a platter and cover with foil.

4Return the pan to the heat and add the remaining tablespoon of olive oil, onions, thyme, rosemary and garlic.

5Saute for 4-5 minutes.

6Add the balsamic vinegar, honey and chicken stock.

7Cook until reduced by 1/2.

8Turn off the heat and add the butter.

9Stir until the butter melts.
-
10Add the chicken back to the pan and coat it in the glaze.
