Balsamic Roasted Brussels

- 1-1/2 pounds Brussel sprouts
- 4 ounces Pancetta or bacon
- 1/4 cup olive oil
- 1/2 teaspoon Kosher salt and pepper
- 1 tablespoon Syrupy balsamic vinegar
Directions

1Preheat oven to 400F or 205C.

2Place sprouts on sheet pan, including some of the loose leaves.

3Cut pancetta into 1/2 inch dice. Add to pan. Add 1/2 tsp each of salt and pepper. Toss with your hands. spread in a single layer.

4Roast for 20 to 30 minutes until tender and slightly browned. Toss once during roasting.

5Remove from oven and drizzle with Balsamic. Check for seasoning and serve hot.
