Ingredients
- 2 Tbsp. flour
- 1/8 tsp. black pepper
- 4 turkey breasts cutlets (about 1 lb. each, about 1/4-inch thick)
- 3 Tbsp. olive oil
- 2 large red peppers, cored, seeded and sliced into 1-inch rings
- 2 cloves garlic, minced
- 1 tsp. dried basil
- 2 Tbsp. balsamic vinegar
Directions

1Combine flour and pepper; coat turkey cutlets with flour. Shake off excess.

2In heavy skillet, heat 2 tablespoons olive oil. Add turkey and brown on each side.

3Remove to warm platter.

4Add remaining oil along with peppers and garlic.

5Reduce heat to low and cook until tender.

6Add basil and vinegar; return turkey to skillet.

7Raise heat to moderate and cook 2 minutes longer until turkey is done.
