- nonstick vegetable spray
- 1 c. whole wheat flour
- 1/2 c. amaranth flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. cinnamon
- 3 Tbsp. margarine
- 3 Tbsp. brown sugar
- 1 egg
- 2 small ripe bananas, mashed (about 1 c.)
- 1/4 c. apple juice
- 1 Tbsp. finely chopped nuts
Directions

1Preheat oven to 400°.

2Spray a 12-cup muffin tin with nonstick vegetable spray.

3Combine the flours, baking powder, baking soda and cinnamon in a bowl.

4Beat together the margarine and sugar until light and fluffy.

5Beat in the egg.

6Mix in dry ingredients alternately with the mashed bananas and apple juice.

7Stir in the nuts.

8Spoon the batter into the muffin cups, filling 2/3 full. Bake for 20 minutes or until golden brown.

9Remove to a wire rack for cooling.
