  • 1/2 cups Butter, Softened
  • 1/2 cups Sugar
  • 2 Tablespoons Ground Flax Seed
  • 6 Tablespoons Water
  • 2 whole Bananas, Mashed
  • 1/2 cups Applesauce
  • 1/2 cups Slivered Or Chopped Almonds
  • 1 teaspoon Vanilla
  • 1/2 cups Whole Wheat Flour
  • 1/2 cups Wheat Germ
  • 1/2 teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoons Salt
  • 1 cup Frozen (or Fresh) Mixed Berries, Thawed
  • 1 cup All Purpose White Flour, + 1 Tsp

Directions

    Preheat oven to 325. Grease muffin pan.

    Cream butter and sugar in a large bowl.

    In a second small bowl, toss berries with 1 tsp flour & set aside.

    Mix flax with water in small bowl.

    Add the bananas, applesauce, vanilla, almonds & flax to the creamed butter and sugar. Mix.

    Sift dry ingredients together and add them to the wet ingredients in the large bowl.

    Fold in floured berries.

    Pour into muffin pan. Bake 20-25 minutes.
