- 1/2 c. margarine
- 1 c. light brown sugar
- 1 egg
- 1 tsp. vanilla extract
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 c. mashed bananas
- 1 c. coconut flakes
- 1 1/4 c. flour
- 1 Tbsp. sugar
- 1 Tbsp. butter
- 3/4 c. chopped nuts (optional)
Directions

1Cream together margarine, brown sugar, egg and vanilla extract. Add baking powder and salt.

2Mix well, then add mashed bananas and 3/4 cup coconut.

3Blend in flour.

4Pour into greased 13 x 9 x 2-inch pan.

5Mix remainder of coconut with 1 tablespoon of butter and sugar (melted) and spoon evenly over the top.

6Bake in oven at 325° for 45 minutes.

7Cool.

8Cut into bars.
