- 8 Tbsp. (1 stick) butter, at room temperature
- 3/4 c. sugar
- 2 eggs
- 1 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. whole wheat flour
- 3 large ripe bananas, mashed
- 1 tsp. vanilla
- 1/2 c. shelled walnuts, coarsely chopped
Directions

1Preheat oven to 350°.

2Grease 9 x 5 x 3-inch bread pan.

3Cream butter and sugar until light and fluffy.

4Add eggs one at a time, beating well after each addition.

5Sift all-purpose flour, baking soda and salt together; stir in whole wheat flour and add to creamed mixture, mixing well.

6Fold in bananas, vanilla and walnuts.

7Pour mixture into pan.

8Bake 50 to 60 minutes or until cake tester comes out clean.

9Cool in pan 10 minutes.

10Turn bread out onto rack.
