  • 2/3 cup brown sugar
  • 1/4 cup butter
  • 1 None large egg, lightly beaten
  • 2 None ripe bananas, peeled, mashed
  • 2 1/2 cups self-rising flour, sifted
  • 1/2 cup milk

Directions

    Preheat oven to 350°F. Lightly grease a 5 x 8 inch loaf pan and line with parchment paper.

    Beat sugar and butter together until light and fluffy. Beat in egg. Stir in bananas, then gradually fold in flour, alternating with milk.

    Spoon mixture into prepared loaf pan. Bake for 1 hour 30 mins, or until a skewer comes out clean. Cool on a wire rack.
