- 3/4 c. sugar
- 1/3 c. vegetable oil
- 2 eggs
- 1 c. mashed ripe bananas (about 2 large)
- 3/4 tsp. lemon rind
- 1 1/2 c. all-purpose flour
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. chopped nuts
Directions

1Preheat oven to 325°.

2Beat together sugar, vegetable oil and eggs. Stir in bananas and lemon rind. Sift together flour, baking soda and salt.

3Add to banana mixture and stir until combined. Fold in nuts.

4Pour into a well-greased 9 x 5 x 3-inch loaf pan. Bake 50 to 60 minutes. Remove from pan and cool on wire rack.
