Ingredients
- 1 3/4 c. all-purpose flour
- 1 1/4 tsp. baking powder
- 1/2 tsp. baking soda
- 2/3 c. sugar
- 1/3 c. margarine
- 2 eggs
- 2 Tbsp. milk
- 1 c. mashed bananas
- 1/4 c. nuts (optional)
- 3/4 tsp. salt (optional)
Directions

1Stir together flour, baking powder, soda and salt.

2Set aside. In mixer bowl, cream sugar and shortening with electric mixer until light.

3Add eggs, one at a time, and milk, beating smooth after each addition.

4Add flour mixture and banana alternately to creamed mixture, beating until smooth after each addition.

5Fold in nuts. Turn into lightly greased 8 x 4 x 2-inch loaf pan.

6Bake in 350° oven for 60 to 65 minutes or until wooden pick inserted in center comes out clean.

7Cool in pan 10 minutes.

8Remove from pan.

9Cool. For easier slicing, wrap and store overnight.

10Makes 1 loaf.
