Ingredients

  • 1/2 cup coconut flour
  • 1/4 cup vanilla whey
  • 1/4 cup almond meal
  • 1/4 cup Natvia
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon psyllium husk
  • 3 medium bananas
  • 3 eggs
  • 1/3 cup 0% Chobani greek yogurt
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened almond milk

Directions

    Preheat oven to 175c. Line a 12-hole muffin tin with paper cups and set aside.

    Sift together all dry ingredients into a medium bowl. In a smaller bowl, mash bananas and whisk in remaining wet ingredients.

    Pour wet ingredients into the dry and mix until well-combined. Distribute evenly into paper cups and garnish with desired toppings (I used shredded coconut).

    Bake for 12-15 minutes, or until a toothpick inserted comes out clean.
