- 2 1/4 c. cake flour
- 1/2 tsp. baking powder
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. butter
- 1 1/2 c. sugar
- 2 eggs
- 1 c. banana, mashed
- 1 tsp. vanilla
- 1/4 c. yogurt
Directions

1In small bowl combine cake flour, baking powder, salt and baking soda.

2In large bowl cream the butter and sugar, then add eggs.

3In another small bowl measure 1 cup lightly mashed ripe bananas, vanilla and 1/4 cup yogurt.

4(You can substitute buttermilk or sour cream for the yogurt; you may use flavored yogurt if you wish.)

5Add the flour mixture alternately with the banana mixture into the butter mixture in thirds.

6Bake in 2 round greased baking pans at 350° for 30 minutes.

7A good use for overripe bananas.
