  • 9-inch pastry shell
  • 1/3 c. flour
  • 1/2 c. sugar
  • 1/4 tsp. salt (optional)
  • 2 c. milk, divided
  • 3 small egg yolks, well beaten
  • 1 tsp. firm butter
  • 1/2 tsp. vanilla
  • 2 large ripe bananas
  • 10x sugar (for sprinkling)

    Bake and cool pastry shell.

    Blend flour, sugar and salt in a heavy saucepan.

    Over low heat, slowly stir in one cup of milk until smooth.

    Add rest of milk.

    Stir until smooth and mixture thickens almost to a boil.

    This will take about 5 to 6 minutes.
