Ingredients

  • 1/4 cups Butter, Softened
  • 1/2 cups Sugar
  • 1/4 cups Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 2 whole Eggs
  • 2 whole Bananas, Mashed
  • 1-1/4 cup All-purpose Flour
  • 2 teaspoons Baking Soda
  • 1/4 cups Buttermilk

Directions

    Preheat oven to 350 degrees.

    Cream butter and sugars together until fluffy. Add vanilla and eggs, mixing until thoroughly combined. Add mashed bananas. In a separate bowl, combine dry ingredients.

    Add half of the dry ingredients to the banana mixture. Stir in buttermilk. Add the remaining dry ingredients and mix. Pour into cupcake pans.

    I used mini cupcake pans, and baked for 15 minutes. Makes 24 mini cupcakes.
