Banana Nut Bread

- 1/2 c. butter
- 3/4 c. brown sugar
- 1 egg
- 1 1/2 c. bread, white or whole wheat flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/4 c. ripe mashed bananas (3 to 4 medium)
- 1/4 c. plain yogurt
- 1 c. chopped pecans
Directions

1Cream butter, sugar and egg.

2Sift all dry ingredients together.

3Combine banana and yogurt in bowl; stir to mix.

4Add dry ingredients to creamed mixture, alternating with banana mixture until all is blended together.

5Stir in pecans.

6Pour in greased pans 1/2 full and bake at 350° for 50 to 60 minutes. Yields 3 small loaves.
