Banana Nut Bread

  • 1/2 c. butter
  • 3/4 c. brown sugar
  • 1 egg
  • 1 1/2 c. bread, white or whole wheat flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/4 c. ripe mashed bananas (3 to 4 medium)
  • 1/4 c. plain yogurt
  • 1 c. chopped pecans

    Cream butter, sugar and egg.

    Sift all dry ingredients together.

    Combine banana and yogurt in bowl; stir to mix.

    Add dry ingredients to creamed mixture, alternating with banana mixture until all is blended together.

    Stir in pecans.

    Pour in greased pans 1/2 full and bake at 350° for 50 to 60 minutes. Yields 3 small loaves.
