- 2 1/3 c. all-purpose flour
- 1 2/3 c. sugar
- 1 1/4 c. mashed bananas (3 medium; best if fully ripe)
- 2/3 c. shortening
- 2/3 c. buttermilk
- 3 eggs
- 1 1/4 tsp. baking powder
- 1 tsp. salt
- 2/3 c. finely chopped nuts
Directions

1Heat oven to 350°.

2Grease and flour an oblong pan (13 x 9 x 2-inch) or two 9-inch or three 8-inch round layer pans.

3Beat all ingredients in a large mixer bowl constantly for 30 seconds.

4Beat on high speed, scraping bowl occasionally for 3 minutes.

5Pour into pan(s).

6Bake until wooden pick inserted in center comes out clean, 45 to 50 minutes for oblong pan and 35 to 40 minutes for layers.

7Cool.

8Frost with Vanilla Butter Frosting, if desired.
