Ingredients

  • 2 1/3 c. all-purpose flour
  • 1 2/3 c. sugar
  • 1 1/4 c. mashed bananas (3 medium; best if fully ripe)
  • 2/3 c. shortening
  • 2/3 c. buttermilk
  • 3 eggs
  • 1 1/4 tsp. baking powder
  • 1 tsp. salt
  • 2/3 c. finely chopped nuts

    Heat oven to 350°.

    Grease and flour an oblong pan (13 x 9 x 2-inch) or two 9-inch or three 8-inch round layer pans.

    Beat all ingredients in a large mixer bowl constantly for 30 seconds.

    Beat on high speed, scraping bowl occasionally for 3 minutes.

    Pour into pan(s).

    Bake until wooden pick inserted in center comes out clean, 45 to 50 minutes for oblong pan and 35 to 40 minutes for layers.

    Cool.

    Frost with Vanilla Butter Frosting, if desired.
