  • 1 1/2 c. sugar
  • 2 sticks butter (room temperature)
  • 2 eggs, beaten (at room temperature)
  • 8 medium ripe bananas, mashed
  • 3 c. self-rising flour
  • 1/2 c. milk
  • 3/4 c. pecans, broken in small pieces
  • 1 tsp. vanilla
  • 1/2 c. Crisco or Puritan oil

Directions

    Cream sugar and butter until fluffy; add eggs and bananas. Mix in flour and milk; add nuts and vanilla.

    Add oil last.

    Pour into greased and floured pans.

    Bake at 350° for 30 to 35 minutes or until golden brown.

    Yield: 2 regular or 3 small loaves.
