  • 2 ripe bananas, mashed
  • 2 eggs
  • 1 3/4 c. flour
  • 1 1/4 c. sugar
  • 1/2 c. chopped walnuts
  • 1/2 c. vegetable oil
  • 1/4 c. plus 1 Tbsp. buttermilk
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 1/2 tsp. salt

Directions

    Place ingredients in order given in a large bowl and combine. Mix well. Transfer to greased 9 x 5 x 3-inch pan.

    Bake at 325° for 60 minutes until top is golden brown and splits slightly. Remove to rack. Do not double.
