  • 3 c. sugar
  • 1 c. shortening
  • 2 tsp. vanilla
  • 3/4 tsp. almond extract
  • 4 eggs
  • 3 1/2 c. flour
  • 2 tsp. soda
  • 1/4 tsp. salt
  • 1/2 c. buttermilk
  • 6 ripe bananas
  • 2 c. pecans, chopped

    Cream first 4 ingredients.

    Beat, adding eggs one at a time. Sift dry ingredients and add alternately with buttermilk.

    Add bananas.

    Beat until all are combined.

    Stir in pecans.

    Bake in 3 bread loaf pans (greased and floured) for one hour and thirty minutes at 325°.
