- 48 vanilla wafers, divided
- 3/4 c. sugar, divided
- 1/3 c. all purpose flour
- dash of salt
- 3 eggs, separated
- 2 c. milk
- 1/2 tsp. vanilla extract
- 5 ripe bananas (about 3 1/2 c.), sliced, divided
Directions

1Reserve 10 wafers for garnish.

2Mix 1/2 c. sugar, flour and salt in top of double boiler.

3Blend in 3 egg yolks and milk. Cook, uncovered, over boiling water, stirring constantly for 10 to 12 minutes or until thickened.

4Remove from heat; stir in vanilla. Spread small amount of custard on bottom of 1 1/2 qt. dish; cover with layer of wafers and a layer of sliced bananas.

5Pour about 1/3 custard over bananas.

6Continue to layer wafers, bananas and custard to make 3 layers of each, ending with custard.

7Beat egg whites until soft peaks form; gradually add remaining 1/4 c. sugar and beat until stiff but not dry.

8Spoon on top of custard, spreading to cover entire surface and sealing well to edges.

9Bake at 350° for 15 to 20 minutes or until browned.

10Cool slightly or refrigerate.

11Garnish with reserved wafers.
