  • 1 banana preferably quite ripe
  • 3 1/3 cups whipped cream
  • 3 1/4 tablespoons sugar
  • agar agar /gelatine

    Destroy the banana using a blender, or if it's really ripe, just a fork.

    Whip roughly 150 g of the whipped cream with 20 g of sugar.

    Gently mix the whipped cream with the banana puree, without letting out too mucht air.

    Bring the remaining cream to a boil in a small pan, and add the agar agar/gelatine. Cook until it is disolved.

    Mix the cooked cream with the banana mixture as quickly as possible (before it cools).

    Distribute the mixture over small trays and put in the fridge to cool.

    After the mixture has set, cover the trays with a thin layer of the remaining sugar

    Use a blow torch or the grill setting of the oven to caramelize the sugar.

    Serve immediately
