Barb's Easy Crock Pot Beef Stew Recipe

Ingredients
- 1 pound beef stew meat, cut into sm. chunks
- Desired amounts of: potatoes, carrots
- 1 sm. onion, minced
- 2 to 3 c. V-8 juice or possibly tomato juice
- 2 tbsp. or possibly more tapioca
Directions

1Chop vegetables and stew meat into edible size pieces.

2Put in crock pot.

3Cover with at least 2 c. of juice.

4Cook slowly all afternoon on a low setting (#2).

5When warm, add in tapioca.

6Continue to cook.

7If it is too thin, add in tapioca; too thick, add in juice or beef broth.

8It is ready to serve when vegetables are tender, not mushy.

9Season to taste.
