- 2 1/2 to 3 lb. chuck roast
- 1 large onion, chopped
- 1/2 c. celery, diced
- 2 Tbsp. vinegar
- 2 Tbsp. brown sugar
- 4 Tbsp. lemon juice
- 1 c. catsup
- 3 Tbsp. Worcestershire sauce
- 1 tsp. chili powder
- 1 1/2 c. water
- salt and pepper
Directions

1Place raw meat in roaster.

2Place onion and celery on top of meat.

3Combine remaining ingredients in a bowl and pour over meat. Cover and roast at 350° until beef is very tender or lower heat and slow roast all day.

4Remove fat and bone. Shred meat with a fork while still hot.

5Return to sauce.

6Leftover freezes well.
