Ingredients

  • 2 1/2 to 3 lb. chuck roast
  • 1 large onion, chopped
  • 1/2 c. celery, diced
  • 2 Tbsp. vinegar
  • 2 Tbsp. brown sugar
  • 4 Tbsp. lemon juice
  • 1 c. catsup
  • 3 Tbsp. Worcestershire sauce
  • 1 tsp. chili powder
  • 1 1/2 c. water
  • salt and pepper

Directions

    Place raw meat in roaster.

    Place onion and celery on top of meat.
  3. 3
    Combine remaining ingredients in a bowl and pour over meat. Cover and roast at 350° until beef is very tender or lower heat and slow roast all day.

    Remove fat and bone. Shred meat with a fork while still hot.

    Return to sauce.

    Leftover freezes well.
