Barbecue Duckling

Ingredients
- 1 (5 to 6 lb.) duckling
- 2 c. barbecue sauce
- 1/3 c. water
Directions

1Thoroughly defrost duckling.

2Remove giblets, neck and excess fat.

3Quarter the duckling.

4Place in salt water for at least 2 to 4 hours.

5Preheat oven to 350°.

6Thoroughly rinse pieces and place on broiler pan which has been coated with cooking spray.

7Place in oven for 1/2 hour, turning once.

8Drain fat.

9Reduce temperature to 325° for 1 hour, turning every 15 minutes.

10Place barbecue sauce and water in 8-quart pot.

11Mix thoroughly.

12Add duckling.
-
13Cover. Cook over very low heat for 2 hours and 15 minutes.

14Delicious over hot rice or pasta.
