Barbecue Pulled Chicken Chili

  • 1/2 whole Yellow Onion, Finely Chopped
  • 2 teaspoons Grapeseed Oil
  • 4 cloves Garlic, Minced
  • 2 whole Jalapenos Seeded And Chopped
  • 1 whole Chicken Breast
  • 1 can (14 1/2 Oz. Size) Diced Tomatoes
  • 1 can (15 Oz. Size) Garbanzo Beans
  • 1 cup Chicken Broth
  • 3 Tablespoons Barbecue Sauce
  • 1 Tablespoon Chili Powder
  • 1 teaspoon Salt, Or To Taste

Directions

    Saute the onion in oil on medium heat until soft, about 3 minutes. Add the garlic and jalapeno. Saute an additional 3 minutes then transfer to a crockpot. Add the remaining ingredients, including the chicken breast, to the crockpot.

    Cook on low for 6 hours. Remove chicken from the crockpot, shred with a fork and put the chicken back in the crockpot. Mix it in, then serve!
