Ingredients

  • 3 lb. chuck roast
  • 1/2 c. chopped onion
  • 1 Tbsp. sugar
  • 1 tsp. dry mustard
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 tsp. paprika
  • 1/2 c. vinegar
  • 1 Tbsp. Worcestershire
  • 1 c. catsup
  • 1 c. water
  • 1/2 bell pepper, sliced (optional)

Directions

    Trim all fat from roast.

    Brown in Dutch oven with a little oil.

    Combine all ingredients.

    Put meat in a heavy roasting pan, pour sauce over it and cover.

    Bake at 350° for 3 to 4 hours. Remove meat and shred with fork and return to sauce.

    For a little spicier version, add the sliced green bell pepper when you bake the roast.
