Barbecued Dolphin

- 2 lb. dolphin fillets
- 1 stick butter or margarine
- 1 to 2 tsp. hot sauce
- 2 to 3 Tbsp. lemon juice
Directions

1Rinse dolphin and pat dry.

2Put dolphin in nonreactive pan. Heat up butter in pan.

3Add hot sauce and lemon juice.

4Let butter mixture cool a little. Pour over dolphin.

5Let sit for 10 minutes. Put dolphin on grill and baste with remaining butter mixture. Dolphin is ready when it flakes easily.
