- 1/2 c. butter
- 2 cloves garlic, minced
- 1/2 c. dry white wine
- 3 Tbsp. chopped fresh herbs, such as chives, thyme, chervil, basil and parsley
- 2 tsp. grated lemon rind
- 1 whole chinook (king) salmon, butterflied with skin intact
Directions

1Melt 1 tablespoon of butter over low heat in a small, heavy saucepan.

2Add the garlic and cook briefly.

3Stir in wine and cook until reduced to 1/2 cup.

4Add the remaining butter and stir until melted.

5Stir in herbs and lemon rind.

6Set aside.
