Ingredients

  • 1 cup cooked barley (not hot)
  • 1/2 - 1 cup nonfat plain yogurt
  • 2 -4 teaspoons Splenda Sugar Blend for Baking or 2 -4 teaspoons Equal sugar substitute
  • 1/4 teaspoon vanilla extract
  • cinnamon (optional to taste)
  • 1/2 cup strawberry, halved or quartered
  • 1/4 cup blueberries

Directions

    In a small bowl, mix together the yogurt, sweetener and vanilla. Stir in the barley. Add additional yogurt if you want a creamier consistency. Adjust sweetner to taste as well.

    Mix in the berries (or whatever you have on hand).

    Divide into dessert bowls and serve.
