Barley Bean Medley

Ingredients
- 1/2 c. chopped onion
- 1 Tbsp. butter or margarine
- 1/4 c. pearl barley
- 1/2 c. dried beans (white, lima or kidney)
- 2 c. vegetables
- chicken or beef broth
- 1 Tbsp. chopped parsley
- 2 strips bacon, cooked crisp and crushed
- 1 Tbsp. coriander seed, crushed
- 1/2 tsp. salt
Directions

1Saute onion in butter until tender.

2Add barley and continue sauteing until barley is light brown.

3Add beans, broth, parsley, bacon, coriander and salt.

4Cover.

5Bring to a boil and then reduce heat to a simmer for about 1 hour, adding additional broth or water if necessary or until beans and barley are tender and all moisture is absorbed.

6Serves 4.
