Barley Bean Medley

Ingredients

  • 1/2 c. chopped onion
  • 1 Tbsp. butter or margarine
  • 1/4 c. pearl barley
  • 1/2 c. dried beans (white, lima or kidney)
  • 2 c. vegetables
  • chicken or beef broth
  • 1 Tbsp. chopped parsley
  • 2 strips bacon, cooked crisp and crushed
  • 1 Tbsp. coriander seed, crushed
  • 1/2 tsp. salt

Directions

    Saute onion in butter until tender.

    Add barley and continue sauteing until barley is light brown.

    Add beans, broth, parsley, bacon, coriander and salt.

    Cover.

    Bring to a boil and then reduce heat to a simmer for about 1 hour, adding additional broth or water if necessary or until beans and barley are tender and all moisture is absorbed.
