Barley Casserole

- 1 c. barley (not quick cooking)
- 6 Tbsp. butter
- 1 c. green onion
- 1/2 c. fresh parsley
- 3 1/3 c. chicken broth
- salt and pepper to taste
Directions

1Saute onion and barley in butter until golden.

2Take off heat. Stir in parsley, salt and pepper.

3Spoon into an ungreased casserole dish.

4Before ready to cook, heat broth and stir in to blend.

5Cook for 1 hour and 10 minutes in 350° oven.
