Barley Corn Casserole

  • 1 cup chopped onion
  • 23 cup chopped carrot
  • 3 chopped garlic cloves
  • 1 tablespoon olive oil
  • 1 cup barley
  • 3 cups fat free chicken broth
  • 12 teaspoon salt
  • 14 teaspoon pepper
  • 2 cups frozen corn, defrosted
  • 12 cup fresh parsley

Directions

    Saute onion, carrot and garlic in olive oil until tender.

    Place in 2 qt prepared baking dish.

    Add barely, chicken broth, salt and pepper.

    Cover and cook at 350 for 60 minutes.

    Uncover and stir in corn and parsley.

    Cover and cook for 10-15 until corn is heated through.
