  • 12 cup barley flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 12 teaspoon baking soda
  • 12 teaspoon salt
  • 1 cup low-fat vanilla yogurt
  • 2 eggs
  • 23 cup dark brown sugar, packed
  • 14 cup light olive oil
  • 1 teaspoon vanilla extract
  • 12 cup chopped dried fruit (apricots, apples, raisins, cranberries or cherries)

    Preheat oven to 375F.

    Spray muffin pan with cooking spray or use cupcake papers.

    Sift dry ingredients together into a large bowl; set aside.

    Whisk together yogurt, eggs, brown sugar, olive oil and vanilla in a bowl until smooth.

    Pour into dry ingredients, mixing until just combined.

    Stir in dried fruit.
