Barley Pilaf

Ingredients
- 1 medium onion, chopped coarse
- 1/4 c. margarine
- 1 c. barley
- 1 (4 oz.) can mushrooms
- 2 c. rich chicken broth
Directions

1Cook chopped onions in margarine until wilted.

2Remove onions and add barley to margarine.

3Cook slowly until golden brown, stirring constantly.

4Mix onion, browned barley, mushroom and chicken broth in casserole.

5Season to taste with salt and pepper. Bake covered for 2 hours at 350° until barley is tender.
