Barley Pilaf

  • 1 medium onion, chopped coarse
  • 1/4 c. margarine
  • 1 c. barley
  • 1 (4 oz.) can mushrooms
  • 2 c. rich chicken broth

Directions

    Cook chopped onions in margarine until wilted.

    Remove onions and add barley to margarine.

    Cook slowly until golden brown, stirring constantly.

    Mix onion, browned barley, mushroom and chicken broth in casserole.

    Season to taste with salt and pepper. Bake covered for 2 hours at 350° until barley is tender.
