- 3 Tbsp. margarine
- 1/2 c. medium barley
- 1 rib celery, minced
- 1 medium onion, minced
- 1 Tbsp. flour
- 7 c. hot chicken broth
- 3/4 c. heavy cream, lightly whipped
Directions

1Melt the margarine in soup pot.

2Add barley, celery and onion and cook, stirring constantly, until the barley is slightly transparent.

3Stir in the flour.

4Add hot chicken broth.

5Simmer covered, stirring occasionally for 1 hour or until barley is tender.

6Add the cream just before serving.

7Serves 6.
