Ingredients

  • 1 c. minced yellow onion
  • 3/4 c. minced celery (some leaves)
  • 1/2 c. butter, margarine or bacon drippings
  • 2 qt. stale bread crumbs or soft white or whole wheat
  • 2 tsp. poultry seasoning or 3/4 tsp. each sage, thyme or marjoram
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 c. minced parsley
  • 1 to 2 eggs, beaten (optional)

Directions

    Saute onion and celery in butter in a skillet over moderate heat 5 minutes until pale golden.

    Mix with remaining ingredients, tossing with 2 forks.
