  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 12 cups skim milk
  • 2 ounces cheddar cheese, grated
  • salt and pepper
  • 14 teaspoon dried mustard

    Melt butter in small sauce pan until it stops bubbling.

    Add the flour, stir until fully incorporated.

    Cook over medium heat until the roux browns slightly.

    Add the milk slowly while whisking continually.

    Cook and stir over medium high heat until the sauce bubbles, then remove from heat.

    Add the cheese & mustard powder, stir gently until the cheese melts and incorporates completely.
