- 2 tablespoons butter
- 2 tablespoons flour
- 1 12 cups skim milk
- 2 ounces cheddar cheese, grated
- salt and pepper
- 14 teaspoon dried mustard
Directions

1Melt butter in small sauce pan until it stops bubbling.

2Add the flour, stir until fully incorporated.

3Cook over medium heat until the roux browns slightly.

4Add the milk slowly while whisking continually.

5Cook and stir over medium high heat until the sauce bubbles, then remove from heat.

6Add the cheese & mustard powder, stir gently until the cheese melts and incorporates completely.

7Season to taste.
