Ingredients

  • 3 qt. cold water
  • bones of 1 chicken, gizzard and neck
  • 1 onion, peeled, cut in half and stuck with 2 cloves
  • 2 carrots
  • 2 celery stalks
  • 6 parsley stems
  • 2 bay leaves
  • salt
  • peppercorns
  • pinch of leaf thyme

Directions

    Place all ingredients in the cold water.

    Bring to a boil. Skim off foam.

    Simmer slowly for 4 hours to reduce by one-third. Strain and freeze.
