- bones of 1 chicken, gizzard and neck
- 1 onion, peeled, cut in half and stuck with 2 cloves
- 2 carrots
- 2 celery stalks
- 6 parsley stems
- 2 bay leaves
- salt
- peppercorns
- pinch of leaf thyme
Directions

1Place all ingredients in the cold water.

2Bring to a boil. Skim off foam.

3Simmer slowly for 4 hours to reduce by one-third. Strain and freeze.
