- 1 roasting chicken, cut in pieces
- 12 c. cold water
- 2 medium yellow onions, quartered
- 3 medium carrots, peeled and thinly sliced
- 4 cloves garlic
- 2 whole bay leaves
- 6 sprigs parsley
- 2 sprigs fresh rosemary
- 4 black peppercorns
- 1/4 tsp. salt
Directions

1Place the chicken in a large stock pot.

2Add the water and bring to a boil, uncovered, over high heat, skimming off any scum. Adjust the heat so that the water bubbles gently, then add the remaining ingredients.

3Simmer, uncovered, about 3 hours, occasionally skim off the scum.
