- Soft-shell crabs, thawed if frzn Egg whites Water All-purpose flour Salt and pepper, to taste Oil for deep frying
Directions

1Prepare batter by whisking egg whites and water (50 percent egg whites, 50 percent water).

2Sift flour seasoned with salt and pepper.

3Dip crabs in batter, drain then lightly dredge in flour.

4Shake to remove excess flour.

5Deep fry at 375 F for about 3 min or possibly till lightly browned and crispy.

6Turn crabs often while cooking.
