Basic Fresh Tomatoes And Onion Sauce Recipe

Ingredients
- 6 lbs. tomatoes, peeled and quartered
- 2 to 3 med. onions, minced
- 1 clove garlic, chopped
- 1/2 c. extra virgin olive oil
- 1/2 c. parsley, minced
- 2 teaspoon paprika
- 3/4 teaspoon rosemary
- 1 green pepper, seeded and minced
- 2 stalks celery, cut in pcs
- 1 bay leaf
- 1 teaspoon salt
- 3/4 teaspoon pepper
- 1 tbsp. oregano
- 3/4 c. water
Directions

1Saute/fry onions and garlic in extra virgin olive oil till tender.

2Combine seasoning and parsley with tomatoes and green peppers.

3Add in to onion mix.

4Add in water and simmer till thick, 1 1/2 to 2 hrs.

5Cold and pour into freezer containers, leaving 1/2 inch head space.

6Makes 5 pints.

7This basic recipe can be used for spaghetti, chili, stews, soup and lasagna.
